Development of an Abrasive Cassava Peeler

Abstract

Peeling of cassava roots is unavoidable and it is the most problematic process in postharvest processing operations. The irregularity in shapes and sizes of cassava tubers has been a major constraint limiting researchers in developing an efficient peeler without accounting for an undesirable level of wastage. The purpose of this study is therefore aimed to design and fabricated a cassava peeling machine using wire cables; knitted on a hollow cylindrical shaft to abrade the peels on cassava. The machine cost N 412,420 to produce and it consists of a watering system, peeling chamber, peel collecting tray, wastewater discharge basin, chain, sprockets and 1.12 kW electric motor. The Peeler was evaluated at a constant abrasive speed of 167.4 rpm, water application rate at 0.00134 m3/s and peeling duration at 120 s. At this set condition, the highest peeling-efficiency for small, medium and large sizes of tubers were achieved; 86.90, 78.40 and 64.98 % while its corresponding flesh-loss was 3.36, 2.59 and 0.62 % respectively with no broken tubers accorded. An average of 300-350 kg/hr was estimated as the machine’s throughput capacity.
